New Year, New recipe, Brilliant Sugar free Applesauce Muffins!

I am back with another recipe, and this time with delicious Apple sauce muffins. They are moist, full of flavour and best of all, sugar free!

I decided to experiment a bit more in the kitchen, and adapted a non sugar free recipe to a sugar free, plus I added a lot of ingredients I thought would be delicious to have in applesauce muffins, and they turned out great!

You will need:

1 dl of Agave Nectar/Syrup (I only had 0,5 dl left so I substituted the remaining 0,5 dl with honey, amazing!)

1 Egg

75 grams of Butter

3 dl of Applesauce

1 tsp of Baking Powder

1 tsp of Baking Soda

1/2 tsp of Cinnamon

1/2 tsp of Cardamom

1 tsp of Vanilla Powder or Essence

1/2 tsp of Salt

3 dl of Flour (You can use any kind of flour you want, as long as it isn’t self raising :))

The cardamom and vanilla are the spices I added, but they are not necessary, but they make a big difference in the flavour, and of course for the better!

How to:

Preheat your oven to 175 °C or 350 °F. Melt the butter and let it cool a bit so it will not scramble the eggs. Mix the egg, agave, applesauce and the melted butter. (If you are using a liquid form of vanilla add it in with the wet ingredients!) Then add in all of your dry ingredients, the cinnamon, cardamom, vanilla, salt, baking powder, baking soda and flour. Mix until combined.

Spoon the mixture in to a greased or lined muffin pan or in to muffin liners. If you are using muffin liners, spoon the mixture in quickly and get them in to the oven fast, because it is quite a wet mixture, so the liners absorb quite a bit of liquid and your muffins end up spreading out in the liners instead of rising properly, but it doesn’t effect the flavour. To counteract this from happening, you can double stack your liners.

Stick your muffins in to the oven for about 15 minutes, check them with a toothpick or a square. If they are done, take them out, let them cool a bit and enjoy!

This recipe will make about 11 medium sized muffins, if you make smaller ones leave them in the oven a bit less, and vice versa if you make bigger ones.

These are truly a treat, which we all deserve sometimes, but remember they are sugar free, which is the best part, so they are not as bad for you as regular muffins! 😀
